Sheep Breeding The terminal sires used in our sheep production are Texel, Suffolk and North Country Cheviot rams which are crossed onto our Herdwick and Texel ewes giving us the ultimate lamb.
We produce organic lamb and mutton at Bridge End Farm, but what's the difference between the two?
Lamb is young meat, whilst Mutton is from an older sheep and due to its maturity has a greater depth of flavour. For our own purposes we define mutton as being approximately 2 years or older. So the animal has enjoyed some 'sun on it's back' as we say in Cumbria.
Certainly in times past Mutton was the most popular meat, being superior in flavour to Lamb. However in recent years it has all but disappeared from our day to day shops and our parents and grandparents remember delicious 'mutton stew'. If you read Mrs Beeton there are huge numbers of recipes for mutton and it was highly prized for it's flavour.
The better chefs and restaurants are now bringing mutton back into the public eye and we hope to see it revive in popularity. Our Ethnic communities enjoy mutton as a regular part of their diet both in the UK and across Europe.
