Recommended cooking time for Beef- Beef - Rare - 45 mins per kilo (20 mins/lb) + 20 mins
- Beef - Medium - 55 mins per kilo (25 mins/lb) + 20 mins
- Beef - Well Done - 66 mins per kilo (30 mins/lb) + 30 mins
- All of the above are cooked at Gas 4/5, 180C, 350F

- Pork - Well Done - 77 mins per kilo (35 mins/lb) +35 mins

Recommended cooking time for Mutton- Braised Mutton - 45 mins per kilo (20 mins/lb) (see below for recipe)
To Braise, the mutton is cooked in 1pt stock/kilo on a bed of vegetables, halfway through the cooking time the joint is turned over. This has the effect of both poaching and roasting each half of the joint. The stock will reduce to make a delicious gravy.

- Cooked at Gas 8, 230C, 450F
- Venison is frequently marinaded, remember to baste frequently during cooking.
